Brenham House Cherry Almond Scones

My husband and I love to bake!  One of the items we enjoy baking is our cherry almond scones which is one of our many varieties of scones we make for breakfast.  I feel like our guests really love them because they don’t have time to make them at home. Then, of course, there are all of those dreaded dishes you have to face when you are finished baking!  When our guests come to Brenham House it is a getaway for them.  We love to serve our guests great food and items they might not have everyday, at their own home!

Here is our signature recipe for our scones:

  • 4 c. flour
  • 1/4 c. sugar
  • 2 T. baking powder
  • 2 tsp. salt
  • 3/4 lb. butter, diced
  • 4 eggs
  • 1 c. cold cream
  • 1 tsp. almond extract
  • 1 c. dried cherries, diced
  • 1/2 c. sliced almonds

Preheat oven to 400 degrees.  In a mixer add flour, sugar, baking powder, salt, and diced  cold butter.  Blend until butter is small pea size.  Then in another bowl beat eggs, add cold cream, and almond extract.  Mix until flour is wet and then add the cherries, and almond and fold in.  Pour out on a floured board and knead about 6 times and add flour as needed to be able to pat or roll out 3/4 inch high.  Cut into 8-10 scones and place on pan lined with parchment paper.  With a little cream or egg wash brush the tops and add sanding sugar, if you like.  Bake for 20 minutes.  Ice for a more decadent dessert!
