Breakfast Sausage Frittata is a great dish to make while eliminating wheat and other grains from your diet.  This recipe is crustless.  Breakfast Sausage Frittata is perfect for breakfast, lunch or dinner!  In addition you can also substitute turkey sausage, or bacon for the sausage.  Furthermore people who prefer no meat can eliminate meat all together.  Also other vegetables may be added in place of the meat.  Most noteworthy the dairy can be eliminated with the substitution of coconut milk in the recipe.  Make this recipe to meet your individual diet restrictions.

Serve Breakfast Sausage Frittata with a side of fruit for a great breakfast. To serve for lunch add a side salad and homemade guacamole.  Either way it is an easy recipe to make and so delicious.

Ingredients:

  • 2 T. coconut oil
  • 1/2 lb. sausage uncooked
  • 1 small potato, scrubbed, and shredded ( or sweet potato)
  • 1/2 c. red bell pepper, diced
  • 1/2 c.  onion, diced
  • 8 eggs
  • 1 tsp. milk, cream, or coconut milk
  • 1/4 tsp. sea salt
  • 1/8 tsp. white pepper, or black
  • hand full of organic grape tomatoes, cut

Preheat oven to 350 degrees. Melt oil in skillet.  Add the sausage, potato, onion and bell pepper and saute until sausage is cooked.  In a mixing bowl add eggs, milk, salt and pepper and beat.  Pour into the prepared skillet over the sausage mixture.  Finally add the tomatoes on top of the egg mixture and bake for about 12 minutes.  Check center for proper doneness.  Be careful not over cook.  Pull out of the oven and let cool a bit.  Top with green onion tops, cilantro, or parsley for added color.  Finally serve this easy breakfast sausage frittata with avocado, guacamole, salsa, side salad or fresh fruit!  Enjoy this simple egg dish!  You will not be disappointed. Serves 4 people.

Best Tomato Basil Soup!

This is a fantastic recipe for tomato basil soup.  I have made many different tomato basil soup recipes over the years.  I just never have been able get the right combination until now.  After tweeting recipes this is a great combination of ingredients.  Also this recipe is gluten free, dairy free, soy free and it is so good.  For a heartier meal you can add meatballs to the soup.

We have monthly get togethers with local innkeepers.  The dinners rotate and each innkeeper hosts a dinner during the year.  This September we met at our bed and breakfast for dinner.  We served this tomato basil soup recipe.  Along with the soup we served homemade pimiento sandwiches and chicken salad croissants.  I am happy to say this recipe passed the innkeeper’s taste test!  When everyone asks for the recipe you know it is a hit!  Try this tomato basil soup recipe which will add vibrant fall colors to your table!
