Ingredients:
- 2 T. coconut oil
- 1/2 lb. sausage uncooked
- 1 small potato, scrubbed, and shredded ( or sweet potato)
- 1/2 c. red bell pepper, diced
- 1/2 c. Â onion, diced
- 8 eggs
- 1 tsp. milk, cream, or coconut milk
- 1/4 tsp. sea salt
- 1/8 tsp. white pepper, or black
- hand full of organic grape tomatoes, cut
Preheat oven to 350 degrees. Melt oil in skillet. Â Add the sausage, potato, onion and bell pepper and saute until sausage is cooked. Â In a mixing bowl add eggs, milk, salt and pepper and beat. Â Pour into the prepared skillet over the sausage mixture. Â Finally add the tomatoes on top of the egg mixture and bake for about 12 minutes. Â Check center for proper doneness. Â Be careful not over cook. Â Pull out of the oven and let cool a bit. Â Top with green onion tops, cilantro, or parsley for added color.
