- 2 T. coconut oil
- 1/2 lb. sausage uncooked
- 1 small potato, scrubbed, and shredded ( or sweet potato)
- 1/2 c. red bell pepper, diced
- 1/2 c. onion, diced
- 8 eggs
- 1 tsp. milk, cream, or coconut milk
- 1/4 tsp. sea salt
- 1/8 tsp. white pepper, or black
- hand full of organic grape tomatoes, cut
Preheat oven to 350 degrees. Melt oil in skillet. Add the sausage, potato, onion and bell pepper and saute until sausage is cooked. In a mixing bowl add eggs, milk, salt and pepper and beat. Pour into the prepared skillet over the sausage mixture. Finally add the tomatoes on top of the egg mixture and bake for about 12 minutes. Check center for proper doneness. Be careful not over cook. Pull out of the oven and let cool a bit. Top with green onion tops, cilantro, or parsley for added color. Finally serve this easy breakfast sausage frittata with avocado, guacamole, salsa, side salad or fresh fruit! Enjoy this simple egg dish! You will not be disappointed. Serves 4 people.
